SOUTHERN TIER BREWING :

IPA - “the iso-alpha acid experience”IPA stands for India Pale Ale and ours is an American version of the classic style. IPA’s namesake lies in its colonial roots. British soldiers on their way to India drank a lot of beer, but found it would go stale on the long voyages. Meanwhile, brewers knew that by adding more hops the beer would stay fresh. Voila! A new style was born and it is one we are proud to brew. Southern Tier IPA is triple-hopped on its journey to your glass for a fully aromatic experience. 6.5% abv

Phin and Matt's -When we sat down to collaborate on this beer, we knew we had to create
something extraordinary. After sampling a wide array of great beers, we hit upon an idea: use vast amounts of whole hops, the fi nest malted barley North America has to offer, and crystal fi ltered artesian water. Thus creating this classic American style pale ale. 5.6% abv

422 Pale Wheat - Pour 422 Pale Wheat Ale into a pint glass, give it a long whiff and you’ll realize that this isn’t your average pale golden wheat. Preserved in itsunfiltered state, 422 is a fantastic session ale in which fl avors of wheat, barley and hops commingle to a refreshing and zesty conclusion. Porter - Porter is our darkest beer, but not necessarily our strongest. It is widely held that the darker the beer, the stronger the beer, but this is summarily false. The contribution of color comes directly from the color of malt that we use. Some malt is roasted to achieve dark color and coffee-like flavor which in turn get transferred to the beer. Our Porter is richly complex with
overtones of chocolate and espresso beans followed by a subtle flavor of hops. It’s a nourishing beer without being too sweet or fi lling.5.2% 5.0% abv

Raspberry - A golden wheat beer brewed with the fi nest North American malted barley and wheat. It’s then lightly hopped with the choicest European varieties. This smooth, crisp golden wheat beer is then fi nished with a hint of raspberry. Enjoy this beer any time of year. 4.5% abv

Choklat - “the ancients called it ‘food for the gods’“ The Popol Vuh, the sacred book of the Maya, unfolds a complex web of mystery around a beverage known as xocoatl (ch-co-atle). At Southern Tier, we’re not surprised that hieroglyphs of the ancient Maya depict chocolate being poured for rulers and gods. Even through the many voyages of Columbus, the mystical bean remained nothing more than a strange currency of the native peoples. Moving through centuries, the circular journey of cacao has been realized in our brewing house, encompassing the complexity of the darkest, bitter-sweet candy together with the original frothy cold beverage of the ancient Maya to bring to you our Blackwater Series Choklat Stout. We have combined the fi nest ingredients to tempt your senses & renew the power & interrelation of history in every bottle. 11.0% abv

Gemini - “blended hoppe & unearthly” High in the winter sky, two parallel stick fi gures are visible & known as “the twins,” or the constellation Gemini. The astronauts of the 1960s fl ew as teams of two in a program named after the celestial pairing. At Southern Tier, we have our own fraternal twins, Hoppe & Unearthly. Blended together & placed in this vessel, the mission of our Gemini is to travel high & take passengers on a journey far into the heavens. 10.5% abv

Hoppe - “an ale of simple composition”  The simplicity of Hoppe tests the skill and ability of the brewer to create something truly majestic. We craft this much like a sculptor who uses only a hammer and chisel to shape stone into a masterpiece. Hoppe is spawned of these few essentials: barley, wheat, hops, yeast and water. This limited palette is an exercise in minimalism, with refi ned elements which are deliberately selected. This simple combination creates a golden shimmering brew infused with delicate aromas. The artful nature of this beer is exposed with the fi rst taste. As the malt and hops create a composition of flavors, an elegant fi nish leaves an impression that your tastes will not soon forget. 10% abv

Iniquity - “the antithesis of unearthly” The hexagram talisman has been used around the world for centuries to invoke magic and goodluck. The six–point star is also the customary symbol of the brewer, representing the essential aspects of purity: water, hops, grain, malt, yeast, and of course, the brewer. Wishes of good fortune often collaborate with the brewer’s creativity to yield dramatic results. We carefully chose the name for this Imperial India Black Ale, Iniquity – a word opposing goodness. Why? This beer is contrary to what one may expect from an IPA; this is an ale as black as night. It is the antithesis of Unearthly. Some may consider it an immoral act to blacken an ale. We suggest they don’t rely on conventional standards. Allow the darkness to consume you. Cheers! 9.0% abv

Big Red -“fueled by creativity & imagination” Inspiration can sometimes be found in the strangest of placed. This eccentric brew started with a single fl ower from a hop named Hallertau. The delicate and spicy aroma present in this flower has been responsible for generations of great beers. Hallertau hops are to a brewer what anold tractor is to a farmer: reliable. Big Red expresses the nobility of Hallertau by placing it at the forefront of this Imperial Ale. Pour it into a snifter. A swirl allows the spicy aromas to come forward as a taste to the lips reveals the complex balance between sweet malts and the bitterness of hops. Big Red’s ability to please is as dependable as your grandpa’s old tractor, and just as powerful–so please don’t drink and drive. 9.5% abv

Unearthly IPA - “an uninhibited infusion of hops” At the Southern Tier Brewing Company, vigorously hopped beer is our standard and inspiration. We continue a commitment to innovation with our most aggressive offering yet. Unearthly is amanifestation of the brewer’s craft; skillfully balancing art and the forces of nature to produce a divine liquid. Delicately pour a taste into a fl uted glass. Smell the enchanting aromas of the hops waft forward as your fi rst sip divulges this beer’s fervent soul. To underestimate Unearthly is to trifle with the mysteries of the universe, so please consume wisely. 11.0% abv

Stoudt's Karnival Kolsch -
This refreshing German-style ale was brewed using 2-row malt, a small amount of red wheat malt and all German hops for bittering and aroma.  This straw colored ale is smooth like a lager due to the colder fermentation temperature and an extended cellaring time.  It is dry and crisp with a slight fruitiness which compliments the mild hop bitterness and aroma...a fresh complement to most foods.  4.8% ABV

Left Hand 400 lb Monkey Why does the world need another IPA ?  Because this one ain't like them others. Using hops of a different color, earthy and herbal, it's well balanced by bready malt.  The result ? An English -style IPA that seperates itself from the ubiquitous bunch.  6.6% ABV

Flying Dog - Garde Dog :  A French Syle Ale, deep golden to light copper with a slight haze, toasty and sweet malt aroma with earth tones.  5.5% ABV

The Bruery - Placentia - CA
Orchard White: Belgian-style witbier. This hazy, straw yellow wheat ale is spiced with coriander, citrus peel and
lavender added to the boil and whirlpool. A spicy, fruity yeast strain is used to add complexity, and rolled oats are added
for a silky texture. ABV: 5.7%

Rugbrřd: Julebryg-style strong brown ale. We took our inspiration for this beer from the traditional Danish dark, wholegrain
rye bread. Instead of the caraway flavor found in American-style rye bread, the Danes allow the spicy, slightly bitter
character of the rye to shine through. We do the same with this robust ale, adding bready, nutty malts with a hint of roast
to complement. And don’t worry, we can’t pronounce it either. ABV: 8.0%

Saison Rue: Belgian/French-style farmhouse ale. This is a beer of subtlety and complexity, with malted rye, spicy, fruity
yeast notes, biscuit-like malt backbone, and a slight citrus hop character. With age, this beer will dry out and will become
more complex with rustic notes of leather and earth from the contribution of a wild yeast strain. ABV: 8.5%

Hottenroth Berliner Weisse: Brewed in memory of my grandparents, this tart German-style Berliner Weisse is as
authentic as it gets. We used lactobacillus and a hint of brettanomyces to sour this very unusual, low gravity wheat beer. To
cut the tartness for those with sweeter tastes, raspberry or woodruff syrup is a traditional way to sweeten the beer. Almost
an extinct style, we hope to help revive the Berliner Weisse in memory of two great people. ABV: 3.1%

Trade Winds Tripel: Belgian-style Tripel. A strong golden ale with a distinctive Southeast Asian flair due to the
addition of rice in the mash and Thai basil in the boil. Our late summer seasonal is refreshing at the end of a long, hot
day, yet its complexity will keep your attention. ABV: 8.1%

Autumn Maple:
Brewed with 17 lbs. of yams per barrel (in other words, a lot of yams!), this autumn seasonal is a
different take on the “pumpkin” beer style. Brewed with cinnamon, nutmeg, allspice, vanilla, molasses, and maple syrup,
and fermented with our traditional Belgian yeast strain, this bold and spicy beer is perfect on a cold autumn evening.
ABV: 10%

Winter Seasonal: Our annual holiday beer will always be some sort of Belgian-style Dark Strong Ale, yet will vary in
flavor profile and alcohol content. The naming will also change every year to the theme of the twelve days of Christmas.
In 2008, Partridge in a Pear Tree, in 2009, Two Turtle Doves, and so on. ABV: 11-13%

Saison De Lente: Our Spring Saison is light blonde in color with a fresh hoppiness and a wild and rustic brettanomyces
character. Lighter in color and alcohol than our Saison Rue, yet equally complex in its own way. Perfect for warmer
weather and Spring celebrations. ABV: 6.5%

Spoetzl Brewing - Shiner, Texas
Shiner Bock - Bock reflects the tradition of genuine Bavarian beers as a brew only a craftsman like Kosmos Spoetzl, trained in the "Old Country," could bring to life. With its deep amber color, distinctive rich flavor and full body, Shiner Bock demonstrates the care of a handcrafted brewing process to bring forth a mellow taste free of the bitter aftertaste found in many micro, specialty and imported beers. Just think of it as Shiner smooth. 4.4% ABV

Shiner Black Lager - Bohemian Black Lager, crafted according to exacting old-world standards with imported Czech Saaz, Styrians Hops and selected roasted malts, is the darkest beer we brew. Initially added to the Shiner family as our 97 Anniversary Brew, the unique and complex flavor of this rare brew found such a following among our customers that we brought it back for good! 4.9% ABV

Shiner Hefe - Hefeweizen (Hef-ay-vite-zen) recalls the classic beers of Bavaria as a true unfiltered wheat brew. This beer captures old-world Munich Malt, wheat grist used in a scant 1% of all brews worldwide, orange and lemon zest in a frothy classic example of bottle-conditioned beer. Adding clover honey and yeast just before it's bottled touches off a unique, secondary fermentation process inside every keg and bottle before its final release from the brewery. 5.4% ABV

Dead Guy Whiskey - Dead Guy Whiskey is distilled from the sweet wort of Rogue’s award-winning Dead Guy Ale. Distiller’s yeast is added and the sweet wort is fermented for 7 days then double distilled in a 150 gallon copper whiskey still and ocean aged in oak.

Hazelnut Rum - Toasted Hazelnut flavor with orange overtones and rich vanilla scents mingled with cinnamon and clove.

Increased Oxygen Reduces Hangovers :
Oxygen for ethanol oxidation is supplied through breathing, the stomach, and the skin. There is a great deal of genetic and environmental variability in the pharmacokinetics of alcohol absorption, distribution, metabolism, and elimination. A new study has found that increasing dissolved oxygen concentrations in alcohol may help to reduce alcohol-related side effects and accidents.

"Ethanol is oxidized to acetaldehyde, then further oxidized to water and carbon dioxide in the body after consumption," explains Kwang-il Kwon, a professor in the college of pharmacy at Chungnam National Univ. and corresponding author for the study. "These oxidation reactions occur primarily via hepatic oxidation and are governed by the catalytic properties of alcohol-metabolizing enzymes, including the microsomal ethanol oxidizing system (MEOS), alcohol dehydrogenase (ADH), and aldehyde dehydrogenase (ALDH). Ethanol oxidation by ADH, ALDH, and MEOS requires oxygen, and a higher oxygen uptake increases the rate of ethanol oxidation."

"Several studies have indicated that high-oxygen water can enhance the survival ability of mice, fatigue recovery, and anoxia endurance function," adds Hye Gwang Jeong, a professor in the department of toxicology in the college of pharmacy at Chungnam National Univ. "It can also increase energy storage. However, the influence of dissolved oxygen concentration on alcohol pharmacokinetics has not previously been described. This manuscript is the first to investigate the influence of dissolved oxygen concentrations on the pharmacokinetics of alcohol in healthy human subjects."

Kwon and his colleagues performed three experiments with 49 healthy volunteers (30 men, 19 women), with a mean age of 27.2 years. Experiment one compared 8 ppm and 20 ppm dissolved oxygen concentrations in 240 ml of 19.5 percent alcoholic beverage. Experiment two compared 8 ppm and 20 ppm dissolved oxygen concentrations in 360 ml of 19.5 percent alcoholic beverage. Experiment three compared 8 ppm and 25 ppm dissolved oxygen concentrations in 360 ml of 19.5 percent alcoholic beverage.

Results showed that elevated, dissolved oxygen concentrations in alcoholic drinks can accelerate the metabolism and elimination of alcohol. For example, the time to reach 0.000 percent blood alcohol concentration (BAC) for the 240 ml of 19.5 percent alcoholic beverage with 20 ppm dissolved oxygen concentration was 20.0 min faster than with 8 ppm (257.7 min). The time to reach 0.000 percent BAC for the 360 ml of 19.5 percent alcoholic beverage with 20 ppm (334.5 min) and 25 ppm (342.1 min) dissolved oxygen concentration was 23.3 min and 27.1 min faster than with 8 ppm, respectively.

"The oxygen-enriched alcohol beverage reduces plasma alcohol concentrations faster than a normal dissolved-oxygen alcohol beverage does," says Kwon. "This could provide both clinical and real-life significance. The oxygen-enriched alcohol beverage would allow individuals to become sober faster, and reduce the side effects of acetaldehyde without a significant difference in alcohol's effects. Furthermore, the reduced time to a lower BAC may reduce alcohol-related accidents."

Both Kwon and Jeong noted that alcoholic drinks with a higher oxygen concentration already exist in Korea, but they lack scientific support. "It seems that these drinks can maintain a high dissolved-oxygen concentration for about 10 to 20 days before the stopper is removed, and for 70 minutes after removing the stopper, respectively, at room temperature," says Kwon. Both scientists suggested that future studies look closer at dissolved-oxygen concentrations on specific enzymes of alcohol metabolism, such as ADH, ALDH, and MEOS.
